Datil BBQ Pizza
Naan Flatbread
1/3 cup Veri Veri Teriyaki
1/3 cup Minorcan Datil BBQ sauce
Canadian Bacon
Diced fresh pineapple
Mozzarella cheese

This recipe allows you to adjust all ingredients to your preference.
Mix teriyaki and Minorcan Datil BBQ sauce together. Mix a bigger batch for multiple flatbreads. Pour on flatbread. Layer Canadian bacon and pineapple on top. Sprinkle with Mozzarella cheese. Bake at 375 until cheese starts to bubble and bread is a golden brown.

Phyllo Shells with Brie and Cran-Datil Jam
3 pkgs. (1.9 ounce) mini phyllo pastry shells (45)
1 cup cran-datil jam
1 tsp. orange zest
1 8 oz. wheel of brie, rind removed
Preheat oven 350. Line baking sheet with parchment paper, place shells on sheet and bake 5 minutes. Cool completely, reduce oven to 300. In a small bowl combine jam and zest. Cut brie into 45 pieces. Place 1 piece in each shell and top with 1 tsp. cran-datil jam. Bake 4-6 minutes.Serve immediately.

Minorcan Clam Chowder
This staple of Minorcan culture is enjoyed throughout St. Augustine and North Florida. There are many variations, but we’re convinced our Minorcan Datil Pepper Products Hot Sauce, or Spice, makes THE best chowder of all!

1 qt. chopped clams with juice
5 large potatoes, diced
3 large onions, diced
4 stalks celery, diced
3 large green peppers, diced
1/2 lb. bacon, diced
2 – 16 oz cans crushed tomatoes
salt and pepper to taste
thyme to taste
2 bay leaves
1/4 cup Minorcan Datil Pepper Hot Sauce to start and then add more to taste
(Can also use Minorcan Datil Pepper Spice to taste)

Shrimp Pilau
This recipe is a staple with the Minorcans of St. Augustine.

1/2 lb. bacon or salt pork
2 small onions diced
1/4 cup green pepper
1-14.5 oz. can stewed tomatoes
1-14.5 oz. can tomato sauce
2 cups Uncle Bens rice
3 datil peppers*
1 lb. peeled and deveined shrimp
1 tsp. garlic powder
salt and pepper to taste

Saute bacon/salt pork in heavy-duty pot. Add diced onions, green pepper, datil peppers and saute until translucent. Add stewed tomatoes and tomato sauce, garlic powder, salt and pepper. Pour in the rice and bring to a boil. Turn heat down. Cook on low heat for about 45 minutes to an hour and give it a stir occasionally. Add shrimp about 20 minutes into cooking. You don’t want them to get tough.

*Datil Spice can be substituted (go easy!) or Minorcan Datil Pepper Hot Sauce

Minorcan Datil Chicken
4 skinless boneless chicken breasts
1 cup mayonnaise
1/2 cup honey
1/4 cup Minorcan Datil Mustard
Montreal Chicken Seasoning
4 sliced pineapple rings
1 package of yellow rice or rice of your choice

Prepare rice according to directions. Coat generously both sides of chicken breast with Montreal Chicken Seasoning. Mix mayonnaise, honey and Minorcan datil mustard in a small bowl. Grill the chicken, being careful not to dry it out. Place chicken on bed of rice. Spoon sauce over chicken and place pineapple ring on top.

Thousand Island Dressing
1 cup mayonnaise
ketchup to taste
Minorcan Datil Relish to taste

Pimento Cheese
8 oz. sharp cheddar cheese
Small jar of pimentos
Minorcan Datil Mayonnaise: Start with 1/2 cup and add until desired consistency

Gator Sauce (Serve with Fried Alligator Tail)
